The Pugliese Acqua Sala is more than just bread; it's a connection to a past where frugality and simplicity were fundamental values. Born in times when ingredients were scarce and every gram of food was precious, the Acqua Sala represents the ingenuity of the Pugliese in creating something delicious with the bare essentials.

This bread, made with only water, salt, and flour, was often prepared by Pugliese farmers who needed a filling and long-lasting food to take with them during their long days in the fields. Without the use of yeasts, Acqua Sala was quick to prepare and could be baked on hot stones or under embers.

As time passed, while Puglia went through transformations and developments, the Acqua Sala remained a living testament to its humble origins. Even today, in many Pugliese homes, the art of preparing Acqua Sala is passed down from generation to generation, keeping alive a tradition that reflects the strength, resilience, and passion of the Pugliese people. Each piece of Acqua Sala is a piece of history, a reminder of times gone by, and a tribute to the simplicity and authenticity of Pugliese cuisine.

Ingredienti

Ingredients for 4 people:


  • 500 gr of stale bread

  • 1 glass of water

  • 400 gr of cherry tomatoes

  • 2 red spring onions

  • 1 garlic clove

  • 3 lemon wedges

  • Salt, basil, and oregano (to taste)

  • Credo Extra Virgin Olive Oil

Preparazione

Preparation: Place chunks of stale bread in a bowl containing a solution of cold water and salt. Add the spring onion and finely sliced cherry tomatoes to the solution.


Season everything with basil, oregano, a clove of garlic, and small pieces of lemon; add the oil and mix well, adjusting the salt to taste.
